Cucumber Sandwiches For A Baby Shower

Our reader Kris sent in some fabulous ideas to make your own cucumber sandwiches for a baby shower. Cucumber sandwiches are so light and fresh that they are perfect to be used year round in a variety of themes. Thanks so much for sharing your recipe with us Kris!


Kris's Cucumber Sandwiches:

The cucumber sandwiches are so addicting! I had a couple people ask me for the recipe at a recent baby shower I hosted. I like how light it is.

To make the cucumber sandwiches start with
1 package of softened cream cheese (8 oz.)
1/2 cup mayonnaise
2 medium cucumbers that have been sliced
2 loaves of French bread, cut up in 1 inch slices
1 packet of dry Italian Seasoning mix
a pinch of dill weed

Mix together the dry Italian dressing, cream cheese and mayonnaise in a bowl. Refrigerate for at least 6 hours, preferably overnight.

Spread the cream cheese mixture on slices of French bread. Top with a slice of cucumber and a sprinkle of dill weed. These can be served open faced or as a French bread sandwich.

Yummy!

I've heard others use different kinds of bread. If you use thinner bread, you can also use cookie cutters to cut the sandwiches into baby shapes.

Great recipe!

I've been using this recipe for the last couple months and it is awesome! It is one of the most requested items from my family when we are having a get-together. I pretty much follow the recipe above, but have tried different ways of preparing it to see which one I like best.

I've spread it on different breads and crackers. Here are some ideas if you want to try a little variety:

Spread it on crackers like Melba toast, Wheat Thins, and Triscuits.
Some good breads to try- toasted baguette bread, pumpernickel bread, and rye bread have great flavors.
I've also put it in a dish with a butter knife for people to spread on crackers. This way, nothing gets soggy (not that it would last that long anyways).

I also buy the English cucumbers (no seeds) and peel them for pretty presentation and I use fresh dill to give it great flavor. Hope that gives some ideas. Thanks for the great recipe!
